A microwave oven, commonly called by the single word "microwave", is a household kitchen appliance that heats or cooks food by rapidly varying an electromagnetic field. This produces the microwave radiation that excites water and other polarized molecules within food, causing fairly uniform heating throughout all but the thickest food items. No other heating technique has this level of uniformity to the heating of food.

Unlike convention ovens, microwave ovens do not "brown" or bake foods. They make up for this by heating up foods in an efficient and safe manner. However, because they do not bake foods, the microwave oven is not suitable for certain food items.

Although there is concern about the safety of microwave ovens, manufacturers go to great lengths to prevent any leakage of radiation outside of the microwave.There is a always a door-switch mechanism that shuts off the part of the microwave that emits radiation. There are also concerns about the very idea of using radiation to heat food that you're going to put into your body. Most contend that there's nothing to worry about. One common variation of the standard microwave oven is the convection microwave. The convection microwave oven is a standard microwave that has been combined with a convection oven. This eliminate some of the shortcomings of the traditional microwave, while maintaining the advantages. The convection microwave cooks food quickly like a standard microwave, yet it uses heating elements to brown, crisp and carmelize foods just like a standard convection oven. The big negative of the convection microwave is the cost. They are more expensive than a standard microwave, and are not really cost-effective if all you are using your microwave for is reheating your coffee or making frozen dinners. The convection microwave is best for preparing dishes that require convection. Another negative of convestion microwaves is that during normal microwave use, food may splatter onto the heating elements. Until the convection is used, this won't be noticed, but when convection features are used you may have smoke and burnt smells eminating from the oven until the grease and food burns off.

In more recent times, some manufacturers have released convection microwaves that have an added high-power quartz halogen bulb. Some of the names used to market these include "Advantium", "Speedcook" and "Optimawave". These names are supposed to indicate the way they will rapidly cook food with the browning that you get from a conventional oven. These new high-speed convection ovens use a high-intensity halogen light, placed at the top of the inside of the microwave, which emits high levels of infrared radiation to the food's surface. While the food is being heated internally by the microwave radiation and externally via convection and conduction from the heated air in the microwave. The heat from the lamps is strong enough to cause browning carmelization in cooked foods. The foods cooked in these newer appliances are produced with a quality of taste and texture that is what you expect from a conventional oven, not a microwave oven.
